FDA and USDA Okay New Post-Chill Application for
Safe Foods’ Cecure® by Amy Waldroup, PhD
The FDA and USDA have
recently approved a new application for an existing food safety
technology that will offer poultry processors an uncommon combination of
advantages: lower cost, ease of use, water conservation, worker safety,
environmental friendliness, extended shelf-life without labeling, and
consistent post-chill Salmonella positives of 2% or less.
Safe Foods Corporation recently announced the agencies’ approval
of the company’s patented Cecure® brand antimicrobial for a
new post-chill application to raw poultry. In 2004, the FDA and USDA
approved Cecure for a pre-chill poultry application.

“This latest approval is not only for a new post-chill point
of application, but for an entirely new method of applying Cecure to
poultry carcasses,” according to Curtis Coleman, Safe Foods’ CEO. “All
of our commercial data indicate that this new method and point of
application provides processors with the ability to consistently achieve
a post-chill Salmonella positive rate of 2% or less.” Cecure is
also available as a pre-chill OLR application and meets the USDA’s new
OLR criteria. Safe Foods offers a 10% or less Salmonella
positive rate guarantee with the pre-chill Cecure system and 2% or less
Salmonella positive rate guarantee with the post-chill system.
Significantly Lower Cost
The new Cecure application system “costs significantly less, is
considerably simpler, and easier to install, operate, and maintain than
the original application system,” according to Coleman. The new modular
system allows processors to install the system themselves if they desire
(with some assistance from Safe Foods’ personnel).
Extended shelf-life with no labeling
requirements
Because of Cecure’s unique ability to dramatically reduce spoilage
organisms on contact, the new post-chill application provides processors
with the ability to achieve a significant increase in the shelf-life of
treated products. The FSIS has also confirmed in writing that the new
approval would not invoke any labeling requirements for Cecure-treated
poultry products.

“This is a great food safety solution for poultry processors,” said
Dr. Peggy Cook, Chief Scientific Officer for Safe Foods. “This is the
